Liam's Huge, Finally Bloomed, Whole Wheat Torillas

Liam had his 4 month checkup today. When the nurse walked in she started laughing. She asked he's only 4 months right? I confirmed. She put him on the scales weighted and measured him. Just as she suspected he is the size of a 12 month old. He weights 17 lbs 10 oz 95% and measures 27 1/4" off the charts. She asked what size clothes he is in now. I said 12 months, she said sounds about right. So I guess I can stop wondering if he is getting enough to eat. Because he's doing just fine.
You know you're a Mom when you can't pick your favorite picture out of three when they are all practically identical. So for your viewing pleasure three identical pictures.


As posted a while back my Plumeria's flowers where falling off before ever opening. I took everyone's comments into consideration. More water, less water, more sun, less sun. And wouldn't you know after sliding the pot all over the patio it ended up in the same location with the same amount of water. And the flowers finally opened. Here is my theory the Plumeria just needed to know that I cared enough about it that I would try all I could think of to get the flowers to open. So drum roll please, I would like to present one of the most beautiful flowers around, My Plumeria

Last but not least of this never ending post. For dinner I made Whole Wheat Flour Tortillas. They turned out great.(Remember whole wheat tortillas will never taste as good as Bleached, nutrition deprived, High in carbs, white flour tortillas) But compared to Whole Wheat Tortillas from the store, they are excellent, easy to make and quite healthy. So here is a picture of the tortilla. I made them into an easy Chicken Tacos. I will post the recipes following the picture.
Whole Wheat Tortillas
  • 2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 T olive oil
  • 1/2 cup warm tap water

By Hand: Combine flour, Baking powder and salt. Add olive oil and stir until well combined. Put in warm tap water 1 T at a time until dough can be gathered into a ball. Add more water if needed 1 T at a time. Knead on floured surface 15-20 times. Let dough rest for 15 minutes Divide dough into 10-12 equal portions and shape into balls. On floured surface roll out ball from center into a circle. Let rest another 20 minutes or so. Cook on ungreased skillet over medium-high heat on each side about 30 seconds or until puffy. You can cook them longer until they are crisp like a big chip.

By Stand Mixer (KitchenAid):Combine flour, Baking powder and salt in bowl fitted with dough hook. Add olive oil and stir until well combined(level 6). Put in warm tap water 1 T at a time until dough can be gathered into a ball. Add more water if needed 1 T at a time. Scrap down sides often. Knead on level 2 for about 1 minute.Let dough rest for 15 minutes Divide dough into 10-12 equal portions and shape into balls. On floured surface roll out ball from center into a circle. Let rest another 20 minutes or so. Cook on ungreased skillet over medium-high heat on each side about 30 seconds or until puffy. You can cook them longer until they are crisp like a big chip.


Crockpot Chicken Tacos

2 defrosted Chicken breasts

1 Can diced Tomatoes with Chilies

1/2 envelope Taco Seasoning

Add all into crockpot cook on high 2 hours then turn down to low for 2 more hours. Chicken will fall apart. Serve on Tortillas with cheese, lettuce, tomato etc.

your tortillas looks good---i might try to make them! I can't believe Liam weighs 17 pounds!!! Quinn is getting her weight checked on Monday...but last time she was weighed she was only 17. She's got some catching up to do! He is REALLY cute--I have a hard time picking pictures too--especially when they are all equally cute!

Oh he is so handsome, and the tortillas look amazing I am very impressed. Derick and I might have to make the tacos one night. Kurtis loves tortillas!!

Okay I know it's been a while since I've been on your blog... but Wow! have my grandkids changed. At least I would have recognized Aiden! The pictures were so cute and the captions were wonderful. I sure miss you guys! Love you tons, Mom.
