Roll Over, Swimming, Ratatouille and 2 Mr Hats

Yesterday Liam finally did it. I laid him on his stomach and instantly he was on his back. This is not a picture of the event (the event was just to fast and unexpected).

Don't think I am a bad mother. We have a swimming pool in our complex but we haven't taken Aiden swimming since last year, until Friday. We all ventured out to the pool. Liam and I didn't last long(20 minutes before it was naptime).

Aiden wasn't sure what to think at first.

But pretty soon he loved it.

I have wanted to make Ratatouille for quite sometime. I stumbled across a recipe and couldn't resist. I served it over whole wheat pasta and it was delicious.

Ingredients

• 2 tablespoon oil, olive
• 1 onion(s), thinly sliced
• 2 clove(s) garlic, minced
• 1 eggplant, peeled and diced
• 2 zucchini, thinly sliced
• 3/4 cup(s) pepper(s), green, bell, diced
• 2 tomato(es), chopped
• 2 tablespoon basil, fresh
• 1/4 teaspoon pepper, black ground
• 1 tablespoon capers, drained (optional)

Preparation

1. Heat the oil in a large nonstick skillet. Add the onion and garlic; stir-fry over medium-high heat about 2 minutes.

2. Add the eggplant and stir-fry about 2 minutes. Add the zucchini, green pepper, and tomatoes; stir-fry 3 minutes more.

3. Add the basil, salt, and pepper. Cover and simmer 30 minutes over low heat.

4. Uncover, stir gently, and simmer 10 minutes more. Add the drained capers. Serve hot or chilled.

Can you imagine Aiden's delight when he found both Mr Hats.
