Potato Chowder

Potato Chowder

My sister Tara passed along a Potato Soup recipe to me that's super easy and very tasty. So here is her Potato Soup with a twist.

8 Cups peeled diced potatoes
3 stacks celery diced
1 cup chopped onion
3 cups chicken broth
2 cups water
2 cubes chicken bouillon

5 tbls melted butter
5 tbls flour
2 cups non fat milk

1 can corn
1 ham steak cut into chunks (I purchased mine at Costco and froze the extra until needed, defrosts quickly, can be used in eggs also.)
1/2 tsp pepper
1/4 tsp salt

In a large pot add potatoes, celery, onion, chicken broth, and chicken bouillon bring to a boil and cover cooking for 15 minutes. (high heat)

Take cooked potatoes out of pot and mash (leaving chucks) 3/4 of potatoes.

In microwave melt butter add flour and whisk together. Add a cup of cooking liquid and whisk until combined. Continue to add 2 more cups (one cup at a time). Then whisk in to large pot. Juice will thicken quickly. (high heat)

Whisk into large pot milk until smooth. Add corn, ham, potatoes, salt and pepper. Turn heat down to low. Cover and let flavor blend together. Can be cooked for 10-45minutes. The longer it cooks together the better the flavor will be. Stir often.

Serve with saltines.
